Ah, we cant’t stop making those tiki recipes from Smuggler’s Cove. But ok, this might be the last one in a while. Why not end this sudden eruption of tiki cocktails in our feed with a Top Notch Volcano by Martin Cate?!
We wanted to put a lot of love into this drink so we juiced a fresh pineapple, saving some smaller pieces for decoration. Juicing a pineapple is a bit messy, and a bit time consuming to be honest. But the juice extracted is so good it’s well worth the effort.
Also we like that this drink has Maraschino liqueur in it, since discovering The Last Word cocktail a few years ago we are quite hooked on this sweet and nutty liqueur. It is so versatile and can be used in many different type of cocktails, including tiki drinks!
1 oz lime juice
1 oz pineapple juice
0,25 oz passion fruit puree
0,75 oz simple syrup
0,25 oz maraschino liqueur
1 oz lightly aged rum
1 oz aged rum
Shake with ice, strain and pour into a tiki-mug. Top up with crushed ice.
