So far we’ve used absinth in cocktails, but never had it the original way diluted with running water over a sugar cube.
Well this was to change during a guided craft cocktail tour in New York. Accompanied by experienced food blogger Brian Hoffmann of www.eatthisny.com we were taken to William Barnacle Tavern. Here the green absinth was prepared in front of our eyes in a showlike way. Very dramatic with flaming sugar cubes and water dripping slowly into the drinks. The result is an anis flavored drink, surprisingly refreshing and easy to drink.
An absinth drink like this we would not consider a “normal” cocktail. But it’s definitely worth trying and we will most likely drink absinth this way again some time.
