Whenever we see a cocktail recipe with an unusual ingredient we need to make it.

And the Tartufo, with its strong flavour of black truffle, is a bold cocktail that rewards those who are just like us – open to the unexpected.

It may not seem like there is a lot of truffle in the cocktail, but it still taste a lot of it. In Greg Henry’s book “Savory Cocktails” the flavour of the cocktail is described as a dark earthiness, which we think is a very accurate description. A unique, adult and serious cocktail indeed.

Tartufo

Recipe

Ingredients:

2 oz gin
1 oz fresh lemon juice
0,5 oz truffle honey syrup
a sprig of rosemary
club soda to top up with

Mixing:

Make the syrup by combining truffle honey with an equal part hot water. Add this into a shaker together with the bruised rosemary, lemon juice and gin. Shake vigorously and strain into a highball glass. Top up with club soda to taste.
