Into Great Silence

green chartreuse, jus vert, orgeat, sherry
Into Great Silence presented by Cocktail Detour

We’ll say it straight away. This recipe is slightly more complicated and time consuming than the typical recipe in our feed.

The cocktail by JP Fetherston is called Into Great Silence and it’s one of the most smashing cocktails we’ve ever made.

Drink your greens some say, and it is exactly what this cocktail enables. Because the first thing you need to do before mixing this cocktail is to make a “jus vert” which is basically a slightly sweetened green vegetable juice made of spinach, parsley and peas;

Jus Vert: combine 70 grams of fresh spinach, 35 grams of fresh parsley, 10 grams of fresh peas, 5 grams salt, 5 grams sugar and 180 grams of water (whereof a handful of icecubes should be included in the weight) in a blender. Blend thoroughly and strain into a bottle. It will last in the fridge for up to 3 days.

The jus vert makes this cocktail ultra green. We made our jus in a Vitamix, and it basically dissolves all the chlorophyll into the jus, resulting in this wonderfully coloured vegetable juice. The cocktail itself taste less of vegetable and more of the green Chartreuse and the dry sherry as well as the sweet orgeat.

It’s truly a stunning cocktail that we would recommend to anyone prepared for some effort in the kitchen/bar, who appreciates a delicious, unique and somehow healthy cocktail. Thanks to Imbibe for featuring this fabulous recipe.
