We are always drawn to complex cocktails like this one. Luxury Cognac, an interesting vermouth and then a high quality absinthe. This is what makes cocktails so cool!
But despite the many potent ingredients, this cocktail is surprisingly harmonic. The amount of absinthe used is just the right not to overwhelm, but still be much present and noticeable.
And serving cocktails in tall wine glasses is beautiful we think. We should do that more often!

Ingredients:
1,5 oz Cognac
1 oz Byrrh
a barspoon absinthe
0,25 oz simple syrup
1 dash Peychaud’s bitters
Mixing:
Stir all ingredients with fresh ice and strain into a tall wine glass. Add one large piece of ice.
