Peychauds is a quite astonishing cocktail ingredient. Not only is it a very versatile bitter, found in both classic and contemporary drinks. But it also gives drinks a very beautiful pink to red colour when mixed with clear spirits.
A very good example of this is a cocktail called La Rosa Louisiane by Will (who makes up 50 percent of the inspiring @kaleandcocktail Instagram account).
This cocktail is boozy, herbal and bitter. And we love it!!

Recipe
Ingredients:
2 oz gin
0,75 oz Lillet Blanc
0,75 oz yellow Chartreuse
3 dashes Peychauds bitters
absinthe for glass rinse
Mixing:
Stir all ingredients but the absinthe with ice, and strain into absinthe rinsed glassware. (We have a small spray bottle with absinthe, so we actually spray rather than rinse).
